More Blueberries

More photos from Sunday and a yummy blueberry muffin recipe from my friend, Suzelle. :)



Blueberry Muffins

-2 cups of flour
-2/3 cup of sugar
-3 tsp of baking powder
-1/2 tsp of salt
-1 cup of fresh blueberries
-1 cup of milk
-1/3 cup of veggie oil
-1 egg slightly beaten
-sugar to sprinkle on top






-Preheat oven to 400.
-In a large bowl, combine flour,
sugar, baking powder and salt.
-Stir in blueberries
-In another bowl combine milk, oil and egg;
beat with fork to mix.
-Make a well in the center of the dry ingredients.
-Pour in wet ingredients and stir just until moistened.
(batter will be lumpy)
-Spoon into greased muffin pan
-Sprinkle tops with sugar
-Bake 20-25 minutes until golden brown.
-Let cool in pan for 5 minutes and then remove
(Makes 12 regular size muffins or 6 jumbo ones)
