Taco Pasta!!!!

Yum...ok....doesn't this look like perfection on a plate!?!?!? Taco Pasta 12 servings Prep: 20 minutes Bake: 45 minutes Ingredients 8 ounces dried penne 2 pounds uncooked ground chicken 1 cup chopped onion 1-1/2 cups water 1 1-1/4-ounce envelope taco seasoning mix 2 11-ounce cans whole kernel corn with sweet peppers, drained 2 cups sliced pitted ripe olives 2 cups ( 8 ounces) shredded cheddar cheese 1 cup salsa 2 4-ounce cans diced green chile peppers, drained 8 cups shredded lettuce 2 medium tomatoes, cut into thin wedges Tortilla chips (optional) Dairy sour cream (optional) Directions 1. Cook pasta according to directions; drain and set aside. 2. Meanwhile, in a 12-inch skillet cook ground chicken and onion, half at a time, until meat is brown; drain fat. Return all of the chicken mixture to skillet. Stir in water and taco seasoning mix. Bring to boiling; reduce heat. Simmer, uncovered, for 2 minutes, stirring occasionally. Some may think the crockpot is just for the winter but I beg to differ. What could be better than spending the day at the beach and coming home to dinner waiting for you? Not much. :) Chicken with Mushroom Stuffing Prep: 40 minutes Cook: 4 to 5 hours (high) Ingredients Nonstick cooking spray 2 tablespoons finely shredded lemon peel 1 tablespoon ground sage 1 tablespoon seasoned salt 1-1/2 teaspoons freshly ground black pepper 8 small chicken legs (drumstick-thigh portion) (about 5 pounds), skinned 1/4 cup butter 4 cups quartered or sliced fresh mushrooms, such as cremini, baby portobello, shiitake, and/or button mushrooms 2 cloves garlic, thinly sliced 8 cups sourdough baguette cut into 1-inch pieces (about 10 ounces) 1 cup coarsely shredded carrot (2 medium) 1 cup chicken broth 1/4 cup chopped walnuts, toasted 3 tablespoons snipped fresh Italian parsley Directions 1. Beef and Chipotle Burritos 6 servings Prep: 20 minutes Cook: 8 to 10 hours Ingredients 1-1/2 pounds boneless beef round steak, cut 3/4 inch thick 1 14-1/2-ounce can diced tomatoes, undrained 1/3 cup chopped onion (1 small) 1 to 2 canned chipotle peppers in adobo sauce, chopped (see tip, page 64) 1 teaspoon dried oregano, crushed 1/4 teaspoon ground cumin 1 clove garlic, minced 6 9 to 10 inch tomato-flavored or plain flour tortillas, warmed 3/4 cup shredded sharp cheddar cheese (3 ounces) 1 recipe Pico de Gallo Salsa Shredded jicama or radishes (optional) Dairy sour cream (optional) Directions 1. Trim fat from meat. Cut meat into 6 pieces. In a 3-1/2- or 4-quart crockery cooker place meat, undrained tomatoes, onion, chipotle peppers, oregano, cumin, and garlic. 2. Hopkins Vineyard

Long time no blog...I know...I know. But, I've had good reason. This weekend we had a guest...non other than the fabulous Frank Mclaughlin. I spent the week before he got here getting ready for him. I had to make sure that the guest bed and bath were all spiffy. :) Then it was a whirlwind weekend since he arrived. We ate, we drank, we walked and talked and had a great time. He's the last of the single friends and he comes to visit every couple of months to get his burb and kiddo fix and then merrily goes back to his bachelor life in the city that never sleeps. :) The kiddos absolutely adore him. They call him Uncle Frank and he loves it. He dotes on them and lets them give him haircuts. Ahem, if you hadn't noticed, Frank shaves his head. LOL!!!!! Anyhoo, on Saturday it was a glorious day so we took Frank to a wine tasting at Hopkins Vineyard in New Preston, CT and here are some photos. Enjoy! love this shot... She's such a poser..... Online Friends Part Deux

Trish. Fellow Blue Crew member. Sweet as can be. Funny as all get out! Needed a hand today. I lent it in the form of this layout. I *heart* you Trishie! :) What can I say about Jenny? She's one of those friends that you just know you would hit it off with the very second you met IRL. She is funny. She is beautiful. She is talented. She is very thoughtful. Today I received a little present from her...a KI Memories summer paper pack. Smooches to you, my friend. We *will* meet IRL one day...soon! :D

Meeting IRL

Yesterday, I drove an hour and a half to meet some online friends that I have never met IRL. We were supposed to meet last year but my darling husband booked a trip with two other families for the same weekend. I was bummed. So, when Nancy aka Yankee Scrapper e mailed me about this year's meet, I was all over it. There were 11 of us in total. Patti H was supposed to join us but her hubby needed her. I got to meet Nancy, Nora, Gina and baby Sophia, Donna, Lorna, Jenn, Jen, Lin, Eileen, and Kristin. We ate, laughed, ate, talked, ate and even scrapped a little. LOL! Eileen made us a delicious lasagna. There were salads, and all sorts of treats. I even taught the girls that the real name for Twizzlers is red vines. LOL!!!!! I also discovered a Basic Grey line I had never seen before...called Perhaps. I instantly fell in love and created 3 layouts. I even did 12x12! :O I don't know what came over me. LOL!!! I being the really large doofus that I am forgot my camera but
