Brussels & Bacon Creamy Spaghetti

Guys! Guys!! I made this recipe the other night and it was out of this world delcious. If you like cheesy pasta, you must make this! I promise you won't be disappointed. Recipe is adapted from Delish.com Ingredients: 1 lb of gluten free spaghetti 6 slices of already cooked bacon, chopped (I used the precooked) 2 shallots, finely chopped 3 garlic cloves, minced 1 lb of brussels sprouts, thinly sliced kosher salt & black pepper to taste juice of 1/2 lemon 1/2 stick of butter 2 Tbsp of olive oil 2 Tbsp of all-purpose flour 1 cup of light whipping cream 1 cup of chicken broth 1 cup of shredded mozzarella 1/3 cup of grated parmesan cheese Directions: In a large pot of salted boiling water, cook spaghetti until al dente. In a large dutch oven, melt butter and add olive oil. Cook shallots, garlic and brussels on medium heat until tender, about 10 minutes. Add salt and pepper and lemon juice. Tis Wednesday and this is what's up ... What we're eating this week: Lately, I've been into sheet pan suppers. All the ingredients in one pan makes me a happy girl. Less mess is always a good thing. I found these two recipes online. One I found on Instagram and one I found on Facebook. Friday Favorites - Summer In Sunny Isles Edition

Good Morning and Happy Friday! I love Fridays even in the summer when I don't have to report for school/work. I look forward to not cooking at all, having my husband take on my early morning dog walking duties and seeing what everyone's favorites are for the week. So, I am linking up with 3 of my favorite bloggers, Andrea, Narci and Erika, to list my favorites for this week. Sunny Isles Beach, Florida. My favorite place in the world. Yes, I mean it. ;) It's my home away from home. I have been visiting here every year, multiple times a year, without fail since I was a baby. I even lived here when I went to grad school. If I have my way, I will end up living here full-time again. :) I am a beach person. 100%! Without a doubt. I would rather live in a one bedroom apartment on the beach than a sprawling mansion in the burbs. This is the view you see as you walk onto the beach from the park. Heaven. Life Lately

Life Lately has been crazy busy. We have had birthdays, graduations, parties, orientations ... all good stuff. So this post is a little bit of this and a little bit of that to kind of catch up on what's been going on the past couple of months in my neck of the woods. ;) First up, my "little" girl turned 16!!!! She loves whales so we had a whale themed party. These cookies were made by my local bakery. Aren't they cute?! We had a cute little candy bar set up. It was a great day celebrating with family. I promise to share more photos in a separate post. :) And, she did not waste any time taking her learner's permit test. This girl is dying to drive a car. She passed!!! :O And...this boy turned 18 and graduated high school. Dang! Do I feel old. LOL!! He got to wear a special tassel as part of the French National Honor Society. So proud. Stranded! Famous People Edition

Today I am linking up with Shay and Erika for their stranded series. This month it's all about three famous people you would pick to be stranded with on a deserted island. This was tricky...much trickier than I thought. So, here goes... The first famous person I would pick to be stranded with on a deserted island would be Tim McGraw. I think it would be fun to have him sing to me on a daily basis. And, lets face it, he's not bad to look at either. ;) Next up would have to be someone who can make me laugh. Being stranded on a deserted island, one would most certainly need a sense of humor. Am I right?! And, for that reason I choose Ray Romano. I think he is hilarious. Plus, I go to bed with him every night...watching Everybody Loves Raymond reruns on tv. :D Finally, I think I need someone who is motivational and uplifting. This selection was a bit harder to narrow down to just one person. My family would disagree and be able to tell you right off the bat...

Friday Favorites!

Happy Friday! I tell ya. The last couple of weeks of school seem to drag on and on. I've got exactly 14 more school days left and then my little preschoolers and I are out for the summer! WooHoo! So, if anytime during this Friday Favorites post I might seem overly excited over nothing too exciting, now you know why. ;) First up for me is this turquoise necklace that Cameran Eubanks wore on a past episode of Southern Charm. Goodness gracious I love this show along with The Real Housewives of Dallas. I am a Bravo TV junkie. But, I digress. LOL! I love this necklace. I need this necklace. But I cannot find it anywhere. I have scoured the internet. I found one that I like almost as much but not quite as much. She needs to have a rstyle account so she can link all of her fabulous pieces that she wears on the show.
