May Recipe Club

I'm linking up with Andrea over at www.momfessionals.com for Recipe Club - May Edition. I'm sharing a recipe I adapted from www.therecipecritic.com. It's delicious and gluten free. Chicken Fried Rice Whenever, I buy a rotisserie chicken or make a whole roasted chicken, I always have a ton left over. Usually, I make chicken enchiladas with them. But a few months ago, I decided to try something else. That's when I discovered this recipe. I changed a couple of things to suit our tastes and dietary needs. Judging by the amount of times my family went back for seconds and thirds, it's most definitely a winner. Ingredients: 3 cups of brown rice 1/2 rotisserie chicken, chopped 1 small onion, chopped 2 scallions, chopped 2 eggs, beaten 1-1/2 cups of peas and carrots 2 Tbsp sesame oil 3 Tbsp of gluten free soy sauce or tamari Directions: -Preheat a wok or cast iron skillet on medium heat -Pour sesame oil on the bottom of the pan & cook oni

Such a Wonderful Weekend

It was a great weekend. It had a little bit of everything...good food, a little bit of shopping and magnificent weather. On Saturday, we took a ride to the mall. The weather was threatening and the husband needed a new suit for work. My daughter never to miss an opportunity to shop joined us but the boy had a party so he stayed back. I went with an agenda. I wanted camo shorts. I hit Banana Republic first but struck out. They only had one style and it was made of pretty thick material so I passed even though they were on sale for $16.99! So, then we went to Gap and I found thee perfect pair! They were light and comfortable and on sale! Plus, I had an extra 15% off for answering an online survey. So, they ended up being just $14.00! I also picked up my favorite shorts from J Crew. I have them in a few different colors and picked up the hot pink pair to add to my collection. I love the 5 inch seam. I'm not into the short shorts. Mother's Day Weekend Recap

I could not have asked for a nicer weekend. It was sunny and warm. Our days were filled but not over scheduled. It was perfect. Saturday started off with an early morning hair appointment for my girl. She had the second step in her balayage hair treatment. This is after the first step... With the second step, it went a bit lighter. More like her natural color. No more black hair for her! LOL Then we had lunch at our favorite Chinese buffet. Picked up a birthday present and dropped the boy off at his friend's party. I stayed home and caught up on laundry while Stew and Natalie ran errands. I hate grocery shopping with a passion. I was just glad not to have to go so laundry seemed like the lesser of two evils. ;) I wore my cute gladiator sandals from Target for an Instagram style challenge. :) After laundry was under control, I tried painting my own nails with an at home gel. Friday Faves!

WooHoo! It's Friday!! It's Mother's Day weekend. And the weather is fabulous right now in New York. Which leads me to my first Friday fave... Now that is what I consider a magnificent forecast. If I have my way, I will be sitting on the beach on Sunday as the forecast has now changed to sunny and 84! And I should have my way. Afterall, it is Mother's Day. This right here is my new favorite breakfast... Light multigrain English muffin, spread with a little bit of peanut butter and topped with fresh sliced strawberries and a drizzle of honey! I am not a breakfast food fan. I know. The horror! I usually have toast with some peanut butter and maybe a half of a sliced banana. But my friend suggested a different fruit and then add the honey It takes it to another level. She was right! Since we are talking about food, my next fave is dinner from this week.
